Je kari thajsk\u00e9, indon\u00e9sk\u00e9, filip\u00ednsk\u00e9 \u2014 ale nejzn\u00e1m\u011bj\u0161\u00ed je p\u0159ece jen to indick\u00e9, kter\u00e9 se od v\u0161ech ostatn\u00edch li\u0161\u00ed. Zat\u00edmco thajsk\u00e9 bude v\u00fdrazn\u011b sladkokysel\u00e9, indon\u00e9sk\u00e9 sp\u00ed\u0161 tekut\u011bj\u0161\u00ed a v\u00fdrazn\u011b \u017elut\u00e9 po kurkum\u011b a ob\u011b s hromadou \u010derstv\u00e9 zeleniny, to indick\u00e9 je v\u011bt\u0161inou hust\u00e9, hutn\u00e9 a velmi intenzivn\u00ed. Je spousta klasick\u00fdch druh\u016f kari \u2014 <em>jalfrezi, ragan josh, korma, saag, vindaloo<\/em> ad. \u2014 n\u011bkter\u00e1 se li\u0161\u00ed hodn\u011b surovinami (korma je t\u0159eba s kokosem a nasl\u00e1dl\u00e1, saag je zelen\u00fd ze \u0161pen\u00e1tu a dal\u0161\u00edch zelen\u00fdch bylin), jin\u00e1 se li\u0161\u00ed hlavn\u011b regionem odkud poch\u00e1zej\u00ed, Indie je velk\u00e1 a jej\u00ed kuchyn\u011b r\u016fznorod\u00e9. Recepty se stra\u0161n\u011b li\u0161\u00ed d\u016fm od domu, region od regionu, nic nen\u00ed dan\u00e9 pevn\u011b. Nen\u00ed v\u016fbec divn\u00e9, \u017ee n\u011bkde chutn\u00e1 jalfrezi jako vindaloo jinde, a naopak. K tomu pak jsou je\u0161t\u011b pom\u011brn\u011b modern\u00ed recepty, vytvo\u0159en\u00e9 um\u011ble, pov\u011bt\u0161inou Brity, pro Brity nebo rovnou a\u017e v Brit\u00e1nii, kde se kari stalo nejb\u011b\u017en\u011bj\u0161\u00edm n\u00e1rodn\u00edm j\u00eddlem, nap\u0159. nejzn\u00e1m\u011bj\u0161\u00ed <em>tikka masala<\/em> nebo <em>butter chicken<\/em>.<\/p>\n\n\n\n<p>Proto je d\u016fle\u017eit\u00e9 neu\u010dit se moc konkr\u00e9tn\u00ed recepty, ale sp\u00ed\u0161 pochopit <strong>z\u00e1kladn\u00ed principy<\/strong> indick\u00e9 kuchyn\u011b. M\u016f\u017eeme si koupit hotovou <strong>kari pastu<\/strong> a jenom p\u0159idat maso a zeleninu. Kdy\u017e to bude pokud mo\u017eno autentick\u00e1 pasta, ide\u00e1ln\u011b p\u0159\u00edmo z Indie nebo z Brit\u00e1nie, nen\u00ed to v\u016fbec \u0161patn\u00e9 \u0159e\u0161en\u00ed. D\u00e1 se z toho p\u0159ipravit dobr\u00e9 a rychl\u00e9 j\u00eddlo. Jen si \u010dlov\u011bk mus\u00ed s\u00e1m naj\u00edt dobrou zna\u010dku, pokud mo\u017eno v n\u011bjak\u00e9m obchodu s exotick\u00fdmi potravinami. Ten n\u00e1zev neznamen\u00e1 nic ne\u017e \u201esm\u011bs ko\u0159en\u00ed\u201c, doslova \u201ehork\u00e9 ko\u0159en\u00ed\u201c \u2014 etymologov\u00e9 se p\u0159ou, jestli proto, \u017ee se tepeln\u011b upravuje, nebo proto, \u017ee rozeh\u0159\u00edv\u00e1 t\u011blo, ale na tom nesejde. Garam masala je k dost\u00e1n\u00ed v milionech podob a obsahuje obvykle v\u0161echna ko\u0159en\u00ed, kter\u00e1 jsou v receptu n\u00ed\u017ee, v r\u016fzn\u00fdch pom\u011brech a obm\u011bn\u00e1ch. Pokud \u010dlov\u011bk d\u011bl\u00e1 kari jen jednou za \u010das a nechce skladovat doma spousty exotick\u00fdch ko\u0159en\u00ed, naj\u00edt si n\u011bjakou garam masalu a va\u0159it z n\u00ed je dobr\u00e9 \u0159e\u0161en\u00ed. Jen bacha \u2013 to, \u017ee se dva r\u016fzn\u00e9 bal\u00ed\u010dky jmenuj\u00ed <em>garam masala<\/em>, znamen\u00e1 pouze to, \u017ee oba obsahuj\u00ed <em>n\u011bjakou<\/em> sm\u011bs indick\u00e9ho ko\u0159en\u00ed. Ale v\u016fbec to neznamen\u00e1, \u017ee ob\u011b sm\u011bsi budou chutnat stejn\u011b. To je takov\u00e1 parodie, jak si knedl\u00edkov\u00fd st\u0159edoevropan p\u0159edstavuje asijskou kuchyni. N\u011bco jako &#8220;\u010desk\u00e1 \u010d\u00edna&#8221;\u2026 Je tam p\u0159edev\u0161\u00edm spousta kurkumy, kter\u00e1 nen\u00ed v indick\u00e9 kuchyni dominantn\u00ed, a jen m\u00e1lo ostatn\u00edho ko\u0159en\u00ed, kter\u00e9 by naopak m\u011blo p\u0159evl\u00e1dat. Nen\u00ed to \u00fapln\u011b \u0161patn\u00e1 v\u011bc a m\u00e1 ur\u010dit\u011b sv\u00e9 m\u00edsto v n\u011bjak\u00fdch \u010desk\u00fdch om\u00e1\u010dk\u00e1ch s orient\u00e1ln\u00edm n\u00e1dechem. P\u0159\u00edpadn\u011b pat\u0159\u00ed nasypat na <em>kariwurst<\/em> s ke\u010dupem u st\u00e1nku v N\u011bmecku. Prod\u00e1vaj\u00ed se v\u011bt\u0161inou su\u0161en\u00e9 a von\u00ed hrozn\u011b p\u0159\u00edjemn\u011b a zaj\u00edmav\u011b, trochu citrusov\u011b, trochu an\u00fdzov\u011b. Pou\u017e\u00edvaj\u00ed se k ochucen\u00ed lu\u0161t\u011bnin, r\u00fd\u017ee i masa, ba dokonce n\u011bkdy i do kari. Ale tomu podstatn\u00e9mu j\u00e1dru se m\u016f\u017eeme p\u0159ibl\u00ed\u017eit. Kdy\u017e budeme koukat na recepty na konr\u00e9tn\u011b pojmenovan\u00e1 kari a sledovat videa od rodil\u00fdch Ind\u016f a Brit\u016f, uvid\u00edme, jak ka\u017ed\u00fd va\u0159\u00ed tot\u00e9\u017e \u00fapln\u011b jinak. Indie je velik\u00e1, m\u00e1 spoustu region\u00e1ln\u00edch kuchyn\u00ed a doma tam stejn\u011b va\u0159\u00ed sp\u00ed\u0161 stylem &#8220;&#8216;jak to va\u0159ila babi\u010dka&#8221; a &#8220;co je zrovna k dispozici&#8221;. Pro n\u00e1s Evropany je kari p\u0159edev\u0161\u00edm ur\u010dit\u00fd styl a zp\u016fsob p\u0159\u00edpravy, v mnoha v\u011bcech dost odli\u0161n\u00fd od na\u0161eho va\u0159en\u00ed \u2013 a dal\u0161\u00ed detaily a rozli\u0161ov\u00e1n\u00ed jsou a\u017e pro pokro\u010dil\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Obecn\u00fd postup<\/h2>\n\n\n\n<p>N\u00e1sleduj\u00edc\u00ed metarecept je takov\u00e9 obecn\u00e9 kari, n\u011bco mezi tikka masala a butter chicken, p\u0159\u00edpadn\u011b \u00fapln\u011b obecn\u00fdm vegetari\u00e1nsk\u00fdm kari. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Maso<\/h3>\n\n\n\n<p>Maso \u2013 ku\u0159ec\u00ed, jehn\u011b\u010d\u00ed, krevety ba i vep\u0159ov\u00e9. Dokonce i hov\u011bz\u00ed se v n\u011bkter\u00fdch \u010d\u00e1stech Indie konzumuje. Indov\u00e9 \u010dasto pou\u017e\u00edvaj\u00ed cel\u00e9 ku\u0159e i s kostmi nahrubo naporcovan\u00e9 na men\u0161\u00ed d\u00edly. Ale i kdy\u017e pou\u017eijeme \u010dist\u00e9 maso bez kost\u00ed, pot\u0159ebujeme ho nakr\u00e1jet na v\u011bt\u0161\u00ed kostky, \u017e\u00e1dn\u00e1 drobotina. Na 4 porce \u0159ekn\u011bme <strong>p\u016fl kila masa<\/strong>. Maso b\u011b\u017en\u00fdm zp\u016fsobem osol\u00edme a te\u010f pot\u0159ebuje d\u016fkladn\u011b oko\u0159enit.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Sm\u011bs ko\u0159en\u00ed, kari pasta<\/h3>\n\n\n\n<p>Pak mus\u00edme p\u0159idat bu\u010fto koupenou garam masalu, nebo jednotliv\u00e1 <strong>ko\u0159en\u00ed<\/strong>. Asi proto je to \u201ehork\u00e9 ko\u0159en\u00ed\u201c, proto\u017ee opravdu vy\u017eaduje trochu \u017e\u00e1ru, aby z\u00edskalo plnou chu\u0165 a v\u016fni. Jak to za\u010dne b\u00fdt moc, rychle zal\u00edt trochou vody, aby se to nesp\u00e1lilo. N\u00e1sleduj\u00ed dv\u011b d\u016fle\u017eit\u00e9 suroviny:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>raj\u010data<\/strong> \u2013 bu\u010fto \u010derstv\u00e1, nebo v konzerv\u011b, nebo protlak a voda, nebo sklenice raj\u010datov\u00e9 passaty, p\u0159\u00edp. to nakombinovat. Zakr\u00fdt a nechat zvolna va\u0159it aspo\u0148 p\u016fl hodiny. Raj\u010data mus\u00ed ztmavnout a chut\u011b se po\u0159\u00e1dn\u011b rozvinout a propojit. Pokud chceme om\u00e1\u010dku hladkou, maso na konci vynd\u00e1me a om\u00e1\u010dku <strong>rozmixujeme<\/strong> \u2013 ale stejn\u011b dob\u0159e m\u016f\u017eeme nechat kari pln\u00e9 kousk\u016f v\u0161eho. Kdy\u017e se d\u011bl\u00e1 vegetari\u00e1nsk\u00e1 verze bez masa, m\u016f\u017eou tam m\u00edsto n\u011bj b\u00fdt v\u011bt\u0161\u00ed kusy kv\u011bt\u00e1ku, brambor, mrkve, d\u00fdn\u011b, cizrna, m\u016f\u017ee se pou\u017e\u00edt sojov\u00e9 maso nebo tofu.
